Bacon Artichoke Pasta Salad - The Southern Lady Cooks

This bacon artichoke pasta salad is good anytime.  I love it for lunch and enjoy having it in the fridge because it will keep for several days.  You can add other ingredients and make it how you like it. I can make a meal out of just this salad.  You could add other meats such as chopped ham or chicken.  You could also cut this recipe in half or double it to suit your needs. I love any kind of pasta in a salad, and most types of pasta will work in this one.  You can also use any kind of cheese you like.  You might also like to check out our creamy cucumber salad.

Rotini pasta


Green onion

Baby spinach

Artichoke hearts

Mozzarella cheese or cheese of your choice


Sour cream

Garlic powder

Italian seasoning


Black pepper

I loved the flavor of this salad, and if you love artichokes, you will love this salad. It’s perfect for taking to any gathering, and it keeps really well. I made this salad to go with pork tenderloin, and it kept for several days. During the summer months, when we are busy outside in the garden, I love knowing I have simple food ready to go!

  • 2 cups uncooked rotini pasta (cooked according to package directions)
  • 4 slices bacon cooked, drained and crumbled
  • 1 cup chopped green onion
  • 2 cups chopped fresh baby spinach
  • 1 13.75 ounce can of artichoke hearts, chopped
  • 1 cup shredded mozzarella cheese or cheese of your choice
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cook pasta, drain and add to large salad bowl. Cook bacon in skillet on top of the stove or in the oven or microwave, drain and crumble. Chop green onion, spinach and artichoke hearts.

  • Add bacon and artichoke hearts to salad bowl along with shredded cheese. In a small bowl whisk together the mayonnaise, sour cream, garlic powder, Italian seasoning, salt and black pepper until smooth. Add to salad and toss all ingredients together.
